Blueberry-Peach Yogurt Bark

A cross between a yogurt parfait and traditional chocolate bark, yogurt bark is the best of both worlds- nutritious and delicious. Blueberry-peach yogurt bark is the perfect afternoon pick-me-up thanks to its balance between nutty, sweet, and fruity.

8-10 people, 2 pieces Fy Yogurt bark each, 42g per piece

Ingredients

1

ounce vegan dark chocolate, chopped (about 2 tablespoons)

1/2

teaspoon coconut oil, divided

1

ounce (2 tablespoons) natural almond butter

2

containers (5.3-ounce) Nature’s Fynd dairy-free peach Fy yogurt

1/2

cup blueberries

Steps

Add chocolate and ¼ teaspoon coconut oil to small microwave-safe bowl. In a separate small microwave-safe bowl, add almond butter and remaining ¼ teaspoon coconut oil. Microwave both bowls, stirring each every 15 seconds until fully melted, 30 to 45 seconds. Let cool slightly, about 3 minutes.

Meanwhile, on a silpat or parchment-lined sheet tray, evenly spread each yogurt cup yogurt into a 9 by 6-inch rectangle (about ¼-inch thick). Place blueberries on top of yogurt, pressing gently to submerge.

Drizzle chocolate on top of yogurt followed by almond butter. Cover sheet tray tightly with plastic wrap and transfer to freezer. Freeze until firm, at least 1 ½ hours.

To serve, break bark into pieces and serve immediately or transfer to an air-tight bag or container and store in the freezer for up to a month.
