Cali Veggie Sandwich with Dairy-Free Herb Cream Cheese
We took the beloved California veggie sandwich one step further and made it vegan by swapping out cheddar cheese and mayo for an herby, dairy-free cream cheese spread.

Ingredients

cup Nature's Fynd Dairy-Free Original Cream Cheese

tbsp minced basil

tbsp minced chives

tsp lemon juice

tsp table salt

slices multigrain sandwich bread

cup grated carrots
1
Persian cucumber, trimmed and sliced thin lengthwise
1/2
avocado, sliced thin
1/4
cup pickled red onions
1
cup microgreens or alfalfa sprouts
Steps
1.
Mix cream cheese, basil, chives, lemon juice, salt, and pepper until thoroughly combined.

Spread 1 tablespoon herb cream cheese mixture evenly over 1 side of each slice of bread. Divide carrots in half and place evenly over 2 slices of bread. Continue dividing and placing cucumbers, avocado, pickled red onion and microgreens on top of slices of bread with grated carrot. Top sandwiches with the other slice. Cut in half and serve.
