Blackberry-Cacao Yogurt Bark

A cross between a yogurt parfait and traditional chocolate bark, yogurt bark is the best of both worlds- nutritious and delicious. Blackberry-cacao yogurt bark is an indulgent treat for when your late night-sweet tooth hits.

Serves

8-10 people, 2 pieces Fy Yogurt bark each, 42g per piece

Ingredients

1

ounce vegan dark chocolate, chopped (about 2 tablespoons)

1/4

teaspoon coconut oil

2

containers (5.3-ounce) Nature’s Fynd dairy-free strawberry Fy yogurt

1/2

cup blackberries, halved

2

tablespoons cacao nibs

Steps

Add chocolate and coconut oil to small microwave-safe bowl. Microwave, stirring every 15 seconds until fully melted, about 45 seconds. Let cool slightly, about 3 minutes.

Meanwhile, on a silpat or parchment-lined sheet tray, evenly spread each yogurt cup yogurt into a 9 by 6-inch rectangle (about ¼-inch thick). Place blackberries on top of yogurt, pressing gently to submerge.

Drizzle chocolate on top of yogurt and sprinkle with cacao nibs. Cover sheet tray tightly with plastic wrap and transfer to freezer. Freeze until firm, at least 1 ½ hours.

To serve, break bark into pieces and serve immediately or transfer to an air-tight bag or container and store in the freezer for up to a month.
