Banana-Granola Yogurt Bark

A cross between a yogurt parfait and traditional chocolate bark, yogurt bark is the best of both worlds- nutritious and delicious. Banana-granola yogurt bark leans heavily into the breakfast world and will have you reaching for yogurt bark after a morning workout.

8-10 people, 2 pieces Fy Yogurt bark each, 42g per piece

Ingredients

1

ounce (2 tablespoons) natural peanut butter

1/4

teaspoon coconut oil

2

containers (5.3-ounce) Nature’s Fynd dairy-free vanilla Fy yogurt

1/2

cup sliced banana

1/4

cup granola

Steps

Add peanut butter and teaspoon coconut oil to small microwave-safe bowl. Microwave, stirring each every 15 seconds until fully melted, about 45 seconds. Let cool slightly, about 3 minutes.

Meanwhile, on a silpat or parchment-lined sheet tray, evenly spread each yogurt cup yogurt into a 9 by 6-inch rectangle (about ¼-inch thick). Place banana on top of yogurt, pressing gently to submerge.

Drizzle peanut butter on top of yogurt and sprinkle with granola. Cover sheet tray tightly with plastic wrap and transfer to freezer. Freeze until firm, at least 1 ½ hours.

To serve, break bark into pieces and serve immediately or transfer to an air-tight bag or container and store in the freezer for up to a month.
